# What you'll need:

02 - 5 cups vegetable broth, kept warm

# Directions:

01 - Heat 2 tablespoons of butter and olive oil in a large skillet over medium heat. Add onions and sauté for 2 to 3 minutes until translucent.
02 - Stir in minced garlic and cook for 1 minute until fragrant.
03 - Add sliced mushrooms and cook for 6 to 8 minutes, stirring occasionally, until they release moisture and begin to brown.
04 - Incorporate Arborio rice and toast for 1 to 2 minutes until the grains appear opaque.
05 - Pour in dry white wine and cook, stirring continuously, until mostly absorbed.
06 - Add warm vegetable broth one ladle at a time, stirring frequently. Wait until most of the liquid is absorbed before adding more. Continue for 20 to 25 minutes until rice is creamy and al dente.
07 - Reduce heat and stir in the remaining 2 tablespoons butter, Parmesan cheese, and heavy cream. Season with salt and pepper to taste.
08 - Remove from heat. Drizzle with truffle oil and sprinkle with chopped parsley before serving.
