Zesty Frozen Lemon Yogurt Popsicles (Printable)

Creamy Greek yogurt popsicles with fresh lemon, perfect for hot summer days

# What you'll need:

→ Main Mixture

01 - 2 cups plain Greek yogurt
02 - ½ cup fresh lemon juice (about 2–3 lemons)
03 - 1 tablespoon lemon zest
04 - ½ cup honey
05 - 1 teaspoon vanilla extract
06 - Pinch of sea salt

→ Optional Add-ins

07 - 2 tablespoons finely chopped fresh mint
08 - ¼ cup mini white chocolate chips
09 - Thinly sliced lemon rounds for garnish

# Directions:

01 - In a large mixing bowl, combine the Greek yogurt, fresh lemon juice, lemon zest, honey, vanilla extract, and sea salt. Whisk until the mixture is completely smooth and uniform.
02 - Gently fold in any optional ingredients such as chopped fresh mint or mini white chocolate chips, if using.
03 - Pour the mixture evenly into popsicle molds, tapping the molds lightly on the counter to release any trapped air bubbles. Insert popsicle sticks into each mold.
04 - Place the filled molds in the freezer and freeze for a minimum of 4 hours, or until the popsicles are completely firm throughout.
05 - To remove the popsicles, briefly run the outside of each mold under warm water for a few seconds, then gently pull the popsicle out. Serve immediately.

# Expert Suggestions:

01 -
  • These require zero cooking so your kitchen stays cool and you get dessert in about ten minutes of actual work.
  • The creaminess from Greek yogurt makes them feel indulgent but each pop is only 85 calories.
  • Lemon zest doubles down on the citrus punch in a way that juice alone never could.
02 -
  • If you pull too hard while unmolding the popsicle will separate from the stick so go slow and let the warm water do the work.
  • Taste the mixture before freezing because once frozen the sweetness dulls slightly and you want it a touch sweeter than you think it needs to be.
03 -
  • Zest directly over the bowl so the volatile lemon oils fall right into the yogurt instead of landing on your cutting board.
  • If your molds do not have built in sticks, cover the top tightly with foil and poke wooden sticks through the center to hold them upright.
