Vegetable Tortilla Roll Ups (Printable)

Soft tortillas filled with herbed cream cheese and crisp peppers, carrot, cucumber and scallions for quick party bites.

# What you'll need:

→ Creamy Spread

01 - 1/2 cup cream cheese, softened
02 - 2 tablespoons sour cream
03 - 1 tablespoon mayonnaise
04 - 1/2 teaspoon garlic powder
05 - 1/2 teaspoon onion powder
06 - Salt and black pepper, to taste

→ Vegetables

07 - 1/2 red bell pepper, finely diced
08 - 1/2 yellow bell pepper, finely diced
09 - 1 small carrot, peeled and grated
10 - 1/2 cucumber, deseeded and finely diced
11 - 2 green onions, finely chopped
12 - 2 tablespoons fresh parsley, chopped (optional)

→ Wraps

13 - 4 large flour tortillas (10-inch diameter)

# Directions:

01 - Combine cream cheese, sour cream, mayonnaise, garlic powder, onion powder, salt, and pepper in a mixing bowl. Mix until the texture is smooth and uniform.
02 - Fold in prepared bell peppers, carrot, cucumber, green onions, and parsley if using, until vegetables are evenly distributed throughout the spread.
03 - Lay out each flour tortilla on a clean surface, ensuring they are flat and fully open.
04 - Spread one quarter of the vegetable cream filling evenly over each tortilla, leaving a 1/2-inch border around the rim.
05 - Roll up each tortilla firmly to form a compact log. Using a sharp knife, cut each roll into 1-inch pieces.
06 - Arrange sliced roll-ups on a serving platter. Serve immediately, or cover and refrigerate for up to 4 hours before enjoying.

# Expert Suggestions:

01 -
  • No oven required, so you’ll stay cool even on the hottest days.
  • If you have colorful veggies in your fridge, you can make these roll ups your own in minutes.
02 -
  • If the tortillas are too cold or stiff, they’ll tear instead of rolling (I’ve learned this the messy way).
  • Slicing with a dull knife will squash the beautiful spirals, so I always use my sharpest blade.
03 -
  • Let the filled, rolled tortillas chill for at least 15 minutes before slicing—this helps them set and makes cleaner cuts.
  • Add a layer of baby spinach or shredded lettuce for an extra bit of crunch and color.
