01 - In a large mixing bowl, combine the ground turkey, egg, onion, garlic, parsley, thyme, Dijon mustard, smoked paprika, salt, and black pepper. Mix gently until just combined—do not overmix.
02 - Divide the mixture into 4 equal portions and shape into burger patties, about 1/2 inch thick.
03 - Heat the olive oil in a large nonstick skillet over medium heat.
04 - Add the patties and cook for 4–5 minutes per side, or until golden brown and the internal temperature reaches 165°F.
05 - Remove from heat and let rest for 2 minutes before serving.
06 - Serve on toasted English muffins, bagels, or with poached eggs and avocado for a brunch twist.
