02 - 1 lb fresh asparagus, trimmed

→ Marinade & Flavorings

03 - 3 tablespoons olive oil
04 - 2 tablespoons fresh lemon juice
05 - 1 tablespoon lemon zest
06 - 2 garlic cloves, minced
07 - 1 tablespoon fresh parsley, chopped
08 - 1 tablespoon fresh dill, chopped
09 - 1 teaspoon salt
10 - ½ teaspoon freshly ground black pepper

→ Garnish

11 - Lemon slices, to serve
12 - Extra fresh herbs, to serve

# Directions:

01 - Preheat oven to 400°F. Line a large sheet pan with parchment paper or lightly grease it.
02 - In a small bowl, whisk together olive oil, lemon juice, lemon zest, minced garlic, parsley, dill, salt, and pepper until well combined.
03 - Arrange asparagus in a single layer on one side of the prepared sheet pan. Drizzle with 1 tablespoon of the marinade and toss to coat evenly.
04 - Pat salmon fillets dry with paper towels. Place them skin-side down next to the asparagus on the sheet pan. Spoon remaining marinade evenly over the salmon.
05 - Add lemon slices on top of the salmon and asparagus if desired for additional flavor and presentation.
06 - Roast in the preheated oven for 15–18 minutes, or until salmon is cooked through and flakes easily with a fork, and asparagus is tender-crisp.
07 - Remove from oven and serve immediately, garnished with extra fresh herbs and additional lemon wedges.

# Expert Suggestions:

01 -
  • The marinade creates these little caramelized spots on the salmon that my family fights over every single time.
  • You can literally have this prepped, cooked and plated in under 30 minutes, which has rescued my sanity on countless weeknights.
02 -
  • Avoid overcrowding the sheet pan or your ingredients will steam rather than roast, robbing you of those delicious caramelized edges.
  • The salmon continues cooking for about 2 minutes after removing from the oven, so take it out when it looks almost done but not quite.
03 -
  • The sheet pan should be hot when you add the food, so place it in the oven during preheating for a better initial sear on both the salmon and asparagus.
  • For meal prep, make extra and flake leftover cold salmon over a salad the next day, adding any roasted asparagus for an instant gourmet lunch.
