Collagen Fruit Jellies (Printable)

Bouncy, fruit-packed jellies boosted with collagen for a nourishing, guilt-free sweet bite everyone will love.

# What you'll need:

→ Fruit Jelly Base

01 - 2 cups 100% fruit juice (orange, apple, berry, or a blend)
02 - 1 to 2 tablespoons honey or maple syrup (optional, to taste)
03 - 3 tablespoons grass-fed collagen peptides (about 30 g)
04 - 3 tablespoons unflavored gelatin powder (30 g)
05 - 1 tablespoon freshly squeezed lemon juice

→ Optional Add-ins

06 - 1/2 cup small diced fresh fruit such as berries, kiwi, or mango (about 75 g)

# Directions:

01 - Pour 1/2 cup of the fruit juice into a medium saucepan. Sprinkle the gelatin powder evenly over the surface and let it sit for 5 minutes until it blooms and becomes slightly thickened.
02 - Place the saucepan over low heat and stir gently but constantly until the gelatin dissolves completely. Do not allow the mixture to boil.
03 - Remove from heat. Stir in the remaining fruit juice, collagen peptides, honey or maple syrup if using, and lemon juice. Whisk until the collagen is fully dissolved and the mixture is completely smooth.
04 - If using diced fresh fruit, gently fold the pieces into the mixture now.
05 - Transfer the mixture into silicone candy molds or a parchment-lined 8x8-inch baking dish.
06 - Refrigerate for at least 2 hours or until the jellies are fully set and firm to the touch.
07 - Pop the jellies out of the silicone molds. If using a baking dish, cut into small cubes. Serve chilled.

# Expert Suggestions:

01 -
  • These little jellies turn a supplement into something you actually crave, which is honestly the best trick I know.
  • They set up in the fridge while you do literally anything else, making them the lowest effort dessert with the highest payoff.
02 -
  • If the gelatin does not bloom properly in cold liquid first, your jellies will have grainy, unappetizing lumps that no amount of stirring can fix later.
  • Heating the collagen with the gelatin over direct heat can clump it, which is why you stir it in off the heat after the gelatin is already dissolved.
03 -
  • Silicone molds in fun shapes turn these from a simple snack into something people photograph before eating, and the release is so much easier than wrestling with a baking dish.
  • A tiny pinch of salt in the mixture rounds out the fruit flavor in a way most people cannot identify but everyone notices.
