02 - Evenly spread softened goat cheese over the bottom half of each croissant.
03 - Layer thinly sliced apples over the goat cheese and drizzle each with 1 teaspoon honey.
04 - Sprinkle with chopped walnuts or pecans and add arugula or baby spinach as desired for flavor and texture.
05 - Season with freshly ground black pepper to taste. Place the top half of the croissant over the filling, gently press, and serve immediately.
